Method
Prepare the Batter
- In a mixing bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In another bowl, mix the wet ingredients: Greek yogurt, egg, milk, and vanilla extract until smooth.
- Combine the wet and dry ingredients, stirring until just combined. Do not overmix; a few lumps are okay.
Cook the Pancakes
- Heat a griddle or non-stick skillet over medium heat and melt a little butter to grease the surface.
- Pour about 1/4 cup of batter onto the griddle for each pancake.
- Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, adding more butter as needed.
Serve
- Serve warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.
