Ingredients
  

For the Shrimp
  • 1 pound large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 small corn tortillas
For the Pineapple Salsa
  • 1 cup pineapple diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1 lime juice
  • 1/2 teaspoon salt
  • 1 jalapeño finely chopped optional for heat

Method
 

Prepare the Shrimp
  1. In a mixing bowl, combine olive oil, garlic powder, cumin, paprika, salt, and black pepper. Add the shrimp and toss to coat evenly.
  2. Let the shrimp marinate for about 10 minutes.
Make the Pineapple Salsa
  1. In another bowl, combine diced pineapple, red onion, cilantro, lime juice, salt, and jalapeño. Mix well and set aside.
Grill the Shrimp
  1. Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers.
  2. Grill the shrimp for about 2-3 minutes on each side, or until they are opaque and cooked through.
Assemble the Tacos
  1. Warm the corn tortillas on the grill for about 30 seconds on each side.
  2. Place grilled shrimp on each tortilla and top with pineapple salsa. Serve immediately.
