Ingredients
  

Vegetables
  • 4 cups shredded green cabbage
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1/2 cup sliced green onions
Dressing
  • 1/4 cup Greek yogurt can substitute with mayonnaise if desired
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup for vegan option
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Vegetables
  1. In a large mixing bowl, combine the shredded green cabbage, shredded red cabbage, shredded carrots, and sliced green onions.
Make the Dressing
  1. In a separate bowl, whisk together the Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
Combine
  1. Pour the dressing over the vegetable mixture and toss until everything is well coated.
  2. Taste and adjust seasoning if necessary.
Serve
  1. Chill in the refrigerator for at least 30 minutes before serving for best flavor.
