Ingredients
  

For the Potatoes
  • 2 lbs baby potatoes or red/Yukon gold potatoes cut into chunks
  • 3 tablespoons olive oil or avocado oil as a substitute
  • 1 tablespoon fresh rosemary (chopped) or 1 teaspoon dried rosemary
  • 1 tablespoon fresh thyme (chopped) or 1 teaspoon dried thyme
  • 4 cloves garlic (minced) adjust based on garlic preference
  • 1 teaspoon salt use kosher salt for best results
  • 1/2 teaspoon black pepper freshly cracked is best
For Garnish
  • 2 tablespoons fresh parsley (chopped) optional
  • 1 lemon cut into wedges for squeezing over potatoes

Method
 

Cooking Instructions
  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the potatoes into even-sized pieces, about 1-inch cubes.
  3. Toss the chopped potatoes in a large bowl with olive oil, salt, pepper, and your choice of fresh herbs.
  4. Spread the seasoned potatoes on a baking sheet in a single layer.
  5. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
