Ingredients
  

Soup Base
  • 2 lbs fresh tomatoes chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 cups vegetable broth
  • 1 tbsp olive oil for sautéing
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tbsp basil fresh or dried

Method
 

Prepare the Soup
  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Stir in the chopped fresh tomatoes, vegetable broth, salt, pepper, and basil. Bring to a boil.
  4. Reduce heat and let simmer for 20 minutes, allowing the flavors to meld.
  5. Using a blender, puree the soup until smooth. Return to the pot and heat through.
