Ingredients
  

Dry Ingredients
  • 1 cup Almond flour
  • 1/4 cup Coconut flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon optional
Wet Ingredients
  • 3 large Eggs
  • 1/4 cup Olive oil
  • 1 teaspoon Vanilla extract
  • 1 cup Zucchini grated
Optional Add-ins
  • 1/2 cup Chopped walnuts or pecans
  • 1/2 cup Sugar-free chocolate chips optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, combine the dry ingredients: almond flour, coconut flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the wet ingredients: eggs, olive oil, and vanilla extract.
  4. Add the grated zucchini to the wet mixture and stir until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in any optional add-ins if desired.
Baking
  1. Pour the batter into the prepared loaf pan and smooth the top.
  2. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
