Ingredients
  

For the loaf
  • 1 cup plain yogurt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp lemon zest
  • 1 cup mixed berries (blueberries, raspberries) fresh or frozen
For the glaze
  • 1 cup powdered sugar
  • 2 tbsp lemon juice

Method
 

Prepare the loaf
  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, whisk together yogurt, sugar, and oil until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, combine flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in lemon zest and mixed berries gently.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes, then transfer to a cooling rack.
Prepare the glaze
  1. In a small bowl, mix powdered sugar and lemon juice until smooth.
  2. Drizzle the glaze over the cooled loaf before slicing.

Notes

For added flavor, you can substitute some of the yogurt with lemon-flavored yogurt.
