Ingredients
  

Salad Base
  • 1 can chickpeas drained and rinsed
  • 1 cup cucumber diced
  • 1 cup cherry tomatoes halved
  • 1 cup bell pepper diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup parsley chopped
  • 1/4 cup fresh mint chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the chickpeas, cucumber, cherry tomatoes, bell pepper, red onion, parsley, and mint.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.
Combine
  1. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
