Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon lemon pepper seasoning store-bought or homemade
  • 1 lemon juice and zest for flavor
For the Asparagus
  • 1 bunch asparagus trimmed
  • 1 tablespoon olive oil for roasting
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For Serving
  • 2 cups cooked rice white or brown
  • 4 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Asparagus
  1. Preheat the oven to 400°F (200°C). Toss the asparagus with olive oil, salt, and pepper. Spread on a baking sheet in a single layer.
  2. Roast in the oven for 12-15 minutes until tender and slightly crispy.
Cook the Salmon
  1. While the asparagus is roasting, heat olive oil in a skillet over medium-high heat.
  2. Season the salmon fillets with lemon pepper seasoning, lemon juice, and zest.
  3. Place the salmon in the skillet, skin-side down, and cook for about 4-5 minutes until the skin is crispy.
  4. Flip the salmon and cook for an additional 3-4 minutes, or until the internal temperature reaches 145°F (63°C).
Assemble the Bowls
  1. Divide the cooked rice among four bowls.
  2. Top each bowl with a salmon fillet, roasted asparagus, and a sprinkle of fresh parsley.
  3. Serve immediately with extra lemon wedges if desired.
