Ingredients
  

Sago Pearls
  • 1 cup sago pearls washed and soaked for 30 minutes
Mango
  • 2 medium ripe mangoes peeled and diced
Coconut Milk
  • 1 can coconut milk full fat for creaminess
Sugar
  • 1/4 cup sugar adjust to taste
Water
  • 4 cups water for cooking sago

Method
 

Prepare Sago
  1. Bring water to a boil in a pot. Add the soaked sago pearls and cook for about 30 minutes, stirring occasionally, until translucent.
  2. Once cooked, drain the sago pearls using a strainer and rinse under cold water to stop the cooking process.
Make Coconut Mixture
  1. In a mixing bowl, combine the coconut milk and sugar. Stir until the sugar is fully dissolved.
Assemble Dessert
  1. In serving bowls, layer the cooked sago pearls, diced mangoes, and pour the coconut mixture over the top.
  2. Chill in the refrigerator for at least 30 minutes before serving.
