Ingredients
  

Crust
  • 1 package pre-made pie crust or phyllo dough
Filling
  • 4 large eggs beaten
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup cooked vegetables e.g., spinach, bell peppers, or mushrooms
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried herbs e.g., thyme or oregano

Method
 

Prepare the Crust
  1. Preheat the oven to 375°F (190°C). Roll out the pie crust and cut into circles to fit the muffin tin cups.
  2. Press the dough circles into the muffin tin to form small cups.
Make the Filling
  1. In a mixing bowl, whisk together the eggs and heavy cream until well combined.
  2. Stir in the shredded cheese, cooked vegetables, salt, pepper, and dried herbs.
Assemble and Bake
  1. Pour the egg mixture into each crust, filling them about 3/4 full.
  2. Bake in the preheated oven for 20 minutes, or until the egg is set and the tops are golden.
  3. Allow to cool slightly before removing from the muffin tin.
