Ingredients
  

Grits
  • 1 cup grits preferably stone-ground
  • 4 cups water for cooking grits
  • 1 cup shredded cheddar cheese for flavor
  • 2 tablespoons butter for creaminess
  • 1 teaspoon salt to taste
Shrimp
  • 1 pound shrimp peeled and deveined
  • 2 tablespoons olive oil for sautéing
  • 3 cloves garlic minced
  • 1 teaspoon paprika for seasoning
  • 1 teaspoon cayenne pepper optional for heat
  • 2 tablespoons green onions chopped, for garnish

Method
 

Prepare the Grits
  1. In a medium saucepan, bring water to a boil. Stir in the grits and salt, reduce heat to low, and simmer for about 20-25 minutes, stirring occasionally.
  2. Once the grits are thick and creamy, stir in the butter and cheddar cheese until melted and well combined.
Cook the Shrimp
  1. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  2. Add the shrimp, paprika, and cayenne pepper. Cook for 3-4 minutes until shrimp are pink and cooked through.
  3. Remove from heat and stir in chopped green onions.
Assemble and Serve
  1. Spoon the creamy grits into small serving dishes or cups.
  2. Top with the sautéed shrimp mixture and serve immediately.

Notes

For a richer flavor, you can add a splash of cream to the grits before serving.
