  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup fresh mint leaves chopped
For the Frosting
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter softened
  • 1/4 cup heavy cream
  • 1 teaspoon mint extract

Method
 

Baking the Cupcakes
  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cupcake liners by placing them in a muffin tin.
  3. Mix together the dry ingredients: flour, sugar, baking powder, and salt in a large bowl.
  4. Combine the wet ingredients: buttermilk, eggs, melted butter, and fresh mint leaves in another bowl.
  5. Fold the wet mixture into the dry ingredients gently with a spatula.
  6. Spoon the batter into your prepared cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  8. Cool the cupcakes on a wire rack for about 10 minutes before removing them from the tin.
Making the Frosting
  1. Whisk powdered sugar and heavy cream together in a small bowl until smooth and glossy.
  2. Drizzle the glaze generously over each cooled cupcake using a spoon or a piping bag.
