Ingredients
  

Chicken and Vegetables
  • 4 pieces chicken thighs bone-in, skin-on
  • 2 cups baby potatoes halved
  • 1 cup carrots sliced
  • 1 cup bell pepper sliced
  • 2 tablespoons olive oil for cooking
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 tablespoon fresh parsley chopped, for garnish

Method
 

Cooking Steps
  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken thighs with garlic powder, paprika, salt, and black pepper.
  3. Place chicken thighs skin-side down in the skillet and sear for 5-7 minutes until golden brown.
  4. Flip the chicken and add the baby potatoes, carrots, and bell pepper around the chicken.
  5. Cover the skillet and cook for an additional 20-25 minutes, or until the chicken is cooked through and vegetables are tender.
  6. Garnish with fresh parsley before serving.
