Ingredients
  

Pasta
  • 1 pound rotini pasta or any pasta of choice
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell peppers diced, mixed colors
  • 1 cup red onion finely chopped
  • 1 cup black olives sliced
  • 1 cup feta cheese crumbled
Dressing
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Salad
  1. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, bell peppers, red onion, black olives, and feta cheese.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, oregano, salt, and black pepper until well combined.
Combine and Serve
  1. Pour the dressing over the pasta salad and toss gently to combine. Adjust seasoning if necessary. Serve chilled or at room temperature.

Notes
