Ingredients
  

Beef and Vegetables
  • 1 pound ribeye steak thinly sliced
  • 1 medium onion sliced
  • 1 medium green bell pepper sliced
  • 1 medium red bell pepper sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Toppings
  • 1 cup provolone cheese shredded
  • 1 cup cheddar cheese shredded
  • 2 tablespoons fresh parsley chopped
Base
  • 4 cups cooked rice or quinoa

Method
 

Prepare the Ingredients
  1. Slice the ribeye steak, onion, and bell peppers into thin strips.
Cook the Beef and Vegetables
  1. In a large skillet, heat olive oil over medium-high heat. Add the sliced onions and bell peppers, and sauté for about 5 minutes until they start to soften.
  2. Add the sliced ribeye steak to the skillet, along with garlic powder, salt, and black pepper. Cook for an additional 5-7 minutes, stirring frequently, until the beef is cooked through.
Assemble the Bowls
  1. Divide the cooked rice (or quinoa) among four bowls.
  2. Top each bowl with the beef and vegetable mixture.
  3. Sprinkle shredded provolone and cheddar cheese over the top, and let it melt slightly.
  4. Garnish with chopped parsley before serving.
