Method
 

Baking the Cupcakes
  1. Preheat your oven to 350°F (175°C). Ensure it's nice and hot before you start baking, as this helps the cupcakes rise beautifully.
  2. Mix the dry ingredients in a bowl. Combine whole wheat flour, baking soda, and a pinch of cinnamon until well mixed.
  3. Combine wet ingredients in another bowl. In a separate mixing bowl, whisk together pumpkin puree, eggs, and peanut butter until smooth.
  4. Fold the wet mixture into the dry ingredients gently. Stir until just combined—be careful not to overmix.
  5. Scoop the batter into lined cupcake tins. Fill each liner about two-thirds full to allow room for rising.
  6. Bake in the preheated oven for 20-25 minutes or until a toothpick comes out clean.
  7. Cool the cupcakes on a wire rack for at least 15 minutes before frosting them.
Frosting the Cupcakes
  1. Prepare a simple yogurt-based frosting by mixing plain Greek yogurt with peanut butter.
  2. Spread it generously on top of cooled cupcakes.
