  • 1 cup milk can use almond or oat milk for a dairy-free option
  • 1 cup pumpkin puree canned or homemade
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1 tablespoon brown sugar optional
Bread
  • 8 slices thick bread such as brioche or challah
Toppings
  • 1/2 cup maple syrup for serving
  • 1/4 cup powdered sugar for dusting
  • 1 cup whipped cream optional

Method
 

Prepare the Batter
  1. In a mixing bowl, whisk together the milk, pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, ginger, salt, and brown sugar until well combined.
Cook the French Toast
  1. Preheat a griddle over medium heat and lightly grease it with butter or oil.
  2. Dip each slice of bread into the batter, allowing it to soak for a few seconds on each side.
  3. Place the soaked bread on the griddle and cook for about 3-4 minutes on each side, or until golden brown.
Serve
  1. Serve the pumpkin French toast warm, topped with maple syrup, powdered sugar, and whipped cream if desired.
