Ingredients
  

Base
  • 2 cups cooked brown rice
  • 1 cup black beans canned, drained and rinsed
Egg Mixture
  • 8 large eggs beaten
  • 1 cup milk or dairy-free alternative
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil for cooking
Toppings
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1/2 cup fresh cilantro chopped
  • 1/2 cup salsa store-bought or homemade

Method
 

Prepare the Base
  1. In a large mixing bowl, combine the cooked brown rice and black beans. Mix well and set aside.
Cook the Eggs
  1. Heat olive oil in a skillet over medium heat. In a separate bowl, whisk together the eggs, milk, salt, and pepper.
  2. Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are scrambled and cooked through, about 5-7 minutes.
Assemble the Bowl
  1. Divide the rice and bean mixture among four bowls.
  2. Top each bowl with a portion of scrambled eggs, cherry tomatoes, avocado slices, cilantro, and salsa.
