  • 2 cups rhubarb, chopped
  • 1 cup onion, finely chopped
  • 1 cup chicken broth or vegetable broth
  • 1/2 cup brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme, chopped or 1/2 teaspoon dried thyme

Method
 

Prepare the Sauce
  1. In a saucepan over medium heat, combine the chopped rhubarb, onion, and chicken broth.
  2. Bring the mixture to a boil, then reduce the heat and simmer for about 10 minutes, or until the rhubarb is tender.
  3. Stir in the brown sugar, apple cider vinegar, salt, black pepper, and thyme.
  4. Continue to simmer for another 10 minutes, stirring occasionally, until the sauce thickens slightly.
  5. Remove from heat and let cool slightly before serving.
