Ingredients
  

For the Grits
  • 1 cup stone-ground grits provides a creamy texture
  • 4 cups water or chicken broth broth adds extra flavor
  • 1 tablespoon butter enhances creaminess
  • 1 cup cheddar cheese sharp cheddar gives a cheesy kick
For the Shrimp
  • 1 pound fresh shrimp large, peeled shrimp
  • 2 cloves garlic minced
  • 2 tablespoons olive oil or butter either works well
  • 1 tablespoon Cajun seasoning adds Southern flair
For the Garnish
  • 2 tablespoons chopped green onions brings a fresh element
  • optional crumbled bacon for smoky flavor

Method
 

Prepare the Grits
  1. In a pot, combine water and salt, bringing it to a gentle boil. Slowly whisk in the grits, reduce heat to low, and simmer until creamy, about 20-25 minutes.
Cook the Shrimp
  1. While the grits are cooking, heat a skillet over medium-high heat. Add olive oil and sauté the shrimp until they turn pink and opaque, around 3-4 minutes.
Make the Sauce
  1. Remove the shrimp and in the same skillet, add garlic, lemon juice, and broth. Scrape up any brown bits for flavor. Cook until slightly thickened, about 2-3 minutes.
Combine
  1. Return the shrimp to the skillet, stirring well to coat them in the sauce. Let everything mingle for an additional minute to absorb flavors.
Serve
  1. Spoon your creamy grits into bowls and top with the savory shrimp mixture. Garnish with chopped green onions or parsley.
