Slow Cooker Beef Stew

Ingredients
  

Beef
  • 2 pounds beef chuck roast cut into 1-inch cubes
Vegetables
  • 4 medium carrots sliced
  • 3 medium potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
Liquids
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
Seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the beef cubes with salt, pepper, thyme, and rosemary. Toss to coat evenly.
  2. Place the chopped onions and garlic at the bottom of the crockpot.
  3. Layer the seasoned beef on top of the onions and garlic.
  4. Add the carrots and potatoes on top of the beef.
  5. Pour the beef broth and Worcestershire sauce over the ingredients in the crockpot.
Cooking
  1. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender.
  2. Once cooked, taste and adjust seasoning if necessary.
Serving
  1. Serve hot, garnished with fresh parsley if desired.

Notes

For thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir into the stew during the last 30 minutes of cooking.
