Ingredients
  

Base Ingredients
  • 4 cups seedless watermelon cubed
  • 1 cup cucumber peeled and chopped
  • 1 cup red bell pepper chopped
  • 1 small red onion chopped
  • 2 tablespoons lime juice
  • 1 teaspoon salt to taste
Spices
  • 1 jalapeño seeded and chopped adjust for heat preference
  • 1 teaspoon cumin ground
  • 1 teaspoon black pepper freshly ground
Garnish
  • 2 tablespoons fresh cilantro chopped
  • 1 lime wedges for serving

Method
 

Prepare the Ingredients
  1. In a blender, combine the watermelon, cucumber, red bell pepper, red onion, lime juice, salt, jalapeño, cumin, and black pepper.
  2. Blend until smooth, adjusting seasoning as needed.
Chill and Serve
  1. Transfer the gazpacho to a bowl and refrigerate for at least 30 minutes to chill.
  2. Serve in bowls, garnished with fresh cilantro and lime wedges.

Notes

For a sweeter gazpacho, use very ripe watermelon. Adjust the heat by adding more or less jalapeño.
