Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts cut into bite-sized pieces
Vegetables
  • 1 cup asparagus trimmed and cut into 2-inch pieces
  • 1 cup snap peas trimmed
  • 1 cup cherry tomatoes halved
  • 1 medium red onion sliced
Herbs and Seasoning
  • 2 tablespoons olive oil for cooking
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Garnish
  • 1/4 cup fresh parsley chopped

Method
 

Cook Chicken
  1. Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 7-10 minutes. Remove from skillet and set aside.
Sauté Vegetables
  1. In the same skillet, add the red onion and garlic. Sauté for 2-3 minutes until fragrant. Add the asparagus, snap peas, and cherry tomatoes. Cook for an additional 5-7 minutes until the vegetables are tender but still crisp.
Combine and Serve
  1. Return the cooked chicken to the skillet. Add thyme and oregano, stirring to combine. Cook for another 2-3 minutes to heat through. Garnish with fresh parsley before serving.
