Ingredients

  • 6 large eggs
  • 2 cups milk whole or 2%
  • 1 loaf day-old bread cubed
  • 1 cup shredded cheese cheddar or mozzarella
Vegetables
  • 1 cup asparagus trimmed and cut into 1-inch pieces
  • 1 cup spinach fresh, chopped
  • 1 cup bell pepper diced
  • 1 small onion diced
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease the baking dish with butter or cooking spray.
  2. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and thyme until well combined.
  3. Add the cubed bread to the egg mixture and stir until the bread is fully coated.
  4. Fold in the asparagus, spinach, bell pepper, onion, and half of the cheese.
Baking
  1. Pour the mixture into the prepared baking dish and spread it evenly.
  2. Top with the remaining cheese.
  3. Bake in the preheated oven for 40-45 minutes, or until the strata is set and golden brown on top.
  4. Let it cool for a few minutes before slicing and serving.
