Spring Vegetable Pasta

Ingredients
  

Pasta
  • 12 oz Pasta (spaghetti or fettuccine) Use whole wheat for a healthier option.
Vegetables
  • 1 cup Asparagus, chopped Trimmed and cut into 1-inch pieces.
  • 1 cup Peas Fresh or frozen.
  • 1 cup Zucchini, sliced
  • 1 cup Cherry tomatoes, halved
Sauce
  • 3 tbsp Olive oil Extra virgin for best flavor.
  • 2 cloves Garlic, minced
  • 1 tsp Lemon zest From one lemon.
  • 2 tbsp Lemon juice Freshly squeezed.
  • 1/2 tsp Salt Adjust to taste.
  • 1/4 tsp Black pepper Freshly ground.
  • 1/4 cup Parmesan cheese, grated Optional for serving.

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
Sauté the Vegetables
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the asparagus and zucchini, cooking for about 5 minutes until they start to soften.
  3. Stir in the peas and cherry tomatoes, cooking for an additional 3-4 minutes until all vegetables are tender.
Combine and Serve
  1. Add the cooked pasta to the skillet with the vegetables. Pour in the reserved pasta water, lemon zest, lemon juice, salt, and pepper. Toss everything together until well combined.
  2. Serve warm, topped with grated Parmesan cheese if desired.
