  • 1 whole chicken preferably free-range
  • 2 cups water for steaming
  • 1 medium onion quartered
  • 2 stalks celery chopped
  • 2 carrots sliced
  • 2 tablespoons olive oil for drizzling
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 bunch fresh thyme for flavor
  • 1 bunch parsley for garnish

Method
 

Preparation
  1. Clean and prepare the chicken, removing any excess fat.
  2. Season the chicken with salt and pepper, and drizzle with olive oil.
  3. In a large pot, bring water to a boil and add the onion, celery, and carrots.
Steaming
  1. Place the seasoned chicken in the steamer above the boiling water.
  2. Cover and steam for about 60 minutes, or until the chicken is cooked through and juices run clear.
Serving
  1. Remove the chicken from the steamer and let it rest for a few minutes.
  2. Garnish with fresh parsley and serve with the steamed vegetables.
