Ingredients
  

Zucchini
  • 4 medium zucchini halved and scooped out
Quinoa Filling
  • 1 cup quinoa rinsed
  • 2 cups vegetable broth for cooking quinoa
  • 1 cup black beans cooked and drained
  • 1 cup corn canned or frozen
  • 1 cup diced tomatoes canned or fresh
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon salt to taste
  • 1 tablespoon olive oil for sautéing
  • 1/2 cup shredded cheese optional for topping

Method
 

Prepare the Zucchini
  1. Preheat the oven to 375°F (190°C). Cut the zucchini in half lengthwise and scoop out the insides to create boats.
Cook the Quinoa
  1. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes or until quinoa is fluffy.
Prepare the Filling
  1. In a skillet, heat olive oil over medium heat. Add black beans, corn, diced tomatoes, cumin, paprika, garlic powder, and salt. Stir to combine and cook for 5 minutes.
  2. Add the cooked quinoa to the skillet and mix well.
Stuff the Zucchini
  1. Fill each zucchini boat with the quinoa mixture. Place them in a baking dish.
  2. If desired, sprinkle shredded cheese on top of the stuffed zucchini.
Bake
  1. Bake in the preheated oven for 20 minutes, or until the zucchini is tender.
