Ingredients
  

For the Rice
  • 1 cup white rice uncooked
  • 2 cups water
  • 1 teaspoon salt
For the Taco Filling
  • 1 pound ground beef or ground turkey
  • 1 packet taco seasoning
  • 1 cup water
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1/2 cup sour cream
  • 1/4 cup sliced jalapeños optional
  • 1/4 cup chopped cilantro optional

Method
 

Prepare the Rice
  1. Rinse the rice under cold water until the water runs clear. Combine rice, water, and salt in a rice cooker and cook according to the manufacturer's instructions.
Cook the Taco Filling
  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add taco seasoning and water to the skillet. Stir and simmer for 5-7 minutes until thickened.
Assemble the Bowl
  1. In a bowl, layer cooked rice, taco filling, and desired toppings such as lettuce, tomatoes, cheese, sour cream, jalapeños, and cilantro.
