  • 1 lb chicken breast cut into bite-sized pieces
  • 1 can coconut milk full-fat for richness
  • 2 tbsp red curry paste adjust for spice preference
  • 1 tbsp fish sauce adds umami flavor
  • 1 tbsp brown sugar balances flavors
  • 1 cup chicken broth low-sodium recommended
  • 1 cup bell pepper sliced, any color
  • 1 cup broccoli florets fresh or frozen
  • 1 tbsp lime juice freshly squeezed
  • 2 tbsp fresh basil for garnish

Method
 

Cooking the Chicken
  1. Heat the skillet over medium heat and add the chicken pieces. Cook until browned, about 5-7 minutes.
  2. Remove the chicken from the skillet and set aside.
Making the Curry Sauce
  1. In the same skillet, add the red curry paste and cook for 1-2 minutes until fragrant.
  2. Pour in the coconut milk, chicken broth, fish sauce, and brown sugar. Stir to combine.
Combining Ingredients
  1. Add the cooked chicken, bell pepper, and broccoli to the skillet. Simmer for 15 minutes until the vegetables are tender.
  2. Stir in the lime juice and adjust seasoning if necessary.
Serving
  1. Serve hot, garnished with fresh basil. Enjoy with rice or noodles.
