Ingredients
  

Pasta
  • 1 cup orzo pasta uncooked
Vegetables
  • 1 cup bell peppers diced
  • 1 cup zucchini diced
  • 1 cup red onion diced
  • 1 cup cherry tomatoes halved
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon garlic minced
  • 1 teaspoon dijon mustard
  • 1 teaspoon honey optional
Herbs
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh basil chopped

Method
 

Prepare the Vegetables
  1. Preheat the oven to 425°F (220°C).
  2. On a baking sheet, toss the diced bell peppers, zucchini, red onion, and cherry tomatoes with olive oil, salt, and pepper.
  3. Roast the vegetables in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.
Cook the Orzo
  1. In a large pot, bring salted water to a boil.
  2. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes.
  3. Drain the orzo and rinse under cold water to stop the cooking process.
Make the Dressing
  1. In a mixing bowl, whisk together olive oil, lemon juice, minced garlic, dijon mustard, honey, salt, and pepper until well combined.
Combine and Serve
  1. In a large bowl, combine the cooked orzo, roasted vegetables, chopped parsley, and basil.
  2. Drizzle the dressing over the salad and toss gently to combine.
  3. Serve chilled or at room temperature.

Notes
