Ingredients
  

Zucchini
  • 4 medium Zucchini Halved lengthwise
Filling
  • 1 lb Ground Beef Can substitute with turkey or plant-based meat
  • 1 cup Bell Pepper Diced
  • 1 cup Onion Diced
  • 2 cloves Garlic Minced
  • 1 cup Tomato Sauce
  • 1 cup Shredded Cheese Cheddar or mozzarella
  • 1 tsp Italian Seasoning

Method
 

Prepare Zucchini
  1. Preheat the oven to 375°F (190°C).
  2. Slice the zucchini in half lengthwise and scoop out the center to create a boat shape.
Make Filling
  1. In a skillet, cook the ground beef over medium heat until browned.
  2. Add diced bell pepper, onion, and minced garlic; sauté until vegetables are tender.
  3. Stir in tomato sauce, Italian seasoning, salt, and pepper; cook for another 5 minutes.
Assemble and Bake
  1. Fill each zucchini half with the meat mixture.
  2. Top with shredded cheese.
  3. Place in a baking dish and bake for 25-30 minutes until zucchini is tender and cheese is melted.
