  • 2 cans (15 oz each) white beans (cannellini or great northern), rinsed
  • 4 cups vegetable broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Once hot, sauté diced onion until translucent (about 5 minutes). Add minced garlic and diced carrots; cook for another 3 minutes.
  2. Add the sausage, breaking it apart with a wooden spoon until browned (approximately 6-8 minutes).
  3. Pour in vegetable broth and rinsed white beans; stir well.
  4. Add chopped kale and bay leaves; season with salt and pepper. Bring to a gentle boil.
  5. Reduce heat to low and simmer uncovered for about 20 minutes or until the carrots are tender.
  6. Remove bay leaves before serving; garnish with fresh herbs if desired.
